Quick Protein Soup
Yield: 2 servings
Ingredients

250ml organic chicken stock
100g chicken breast cut into strips
150g frozen vegetables (broccoli, carrots, sweetcorn, etc)
1 Egg beaten
2 spring onions sliced finally
salt & pepper

Directions:
In a large saucepan, bring the stock to a gentle simmer
Add the chicken and vegetables. Simmer rapidly for 5 minutes
Pour egg in a steady stream, then stir gently while egg cooks
Season with salt and pepper
Spoon into a bowl and garnish with spring onion
